Excellent, Coach. Cooked it about the same way I do a ribeye. A little more done. Came out perfectly medium.
I'm not big on lamb medium rare, I know some are, tho.
You have to coat them with a bit of olive oil to keep the juices in. Pork gets dry otherwise. As far as time, i seer both sides on night heat, then about 4 to 5 minutes each side. Unfortunately, we can't eat pork medium rare. Lol

I love chicharones. They don't make them as good here as they do in Monterrey. We get them from a place where they press them to take all the grease out. Add a little limon juice. BaaaaaaaaGood news, like any of you care, i reunited the calf and mom. Had to literally carry the calf across to the other pasture. Mom was pissed, she'll get over it, its her first calf.
