You have to coat them with a bit of olive oil to keep the juices in. Pork gets dry otherwise. As far as time, i seer both sides on night heat, then about 4 to 5 minutes each side. Unfortunately, we can't eat pork medium rare. Lol

coach, is that the trick. i was wondering how people eat porkchops if they r so dry...
 
Ha! Hard to beat fried pig...Better off dead if you can't eat the things you love...rotten fish comes too mind!!;).
I love chicharones. They don't make them as good here as they do in Monterrey. We get them from a place where they press them to take all the grease out. Add a little limon juice. Chingao,that's good.

chicharones are life..GD.. l love pig skin....I buy pigs and bbq em here...the skin around the ears is worth fightin for. Learned pig roasting from my years in Cuba...
 
Been a lazy day in South Texas. The only excitement all day is watching the newborn calf. She's stuck on the wrong side of the fence. Walking up and down as her mom grazes on the other side. Thank goodness for muscle relaxants and vodka.
 
Good news, like any of you care, i reunited the calf and mom. Had to literally carry the calf across to the other pasture. Mom was pissed, she'll get over it, its her first calf.
