How would you propose to compare their value and production ?Does it really matter what he signs for elsewhere? He's coming off a "down" season, is a year older and his chronic lower-body injuries are well-documented now. What he is going to get elsewhere at this point may not match what he's set to receive for us if we keep him. Maybe Coop and Gallup sign for the same amount, but if so, it will likely be because Cooper is no longer seen as a No. 1. He's still relatively young, but he's going into his eighth season of wear and tear. Usually, the second contract is better than the third because of that unless the receiver is playing at an even higher level at that time.
I largely agreed with your take. Dak won't target him seemingly, so why pay for a #1. I mean he's not a check down RB or TE?

I usually agree with you. But it is just not reality. Nick Saban thought he was a top 5 WR by throwing him the ball more than he threw to Julio Jones. He is in the record books at AlabamaI have no animosity for Coop. He greatly helped this team in 2018 make the playoffs. My problem is not Amari. It’s the FO selling him to the fans and paying him like he’s a top 5 receiver when he clearly is not and never will be. That’s just the truth. Not animosity towards Coop.
His numbers show him to mostly be a really good route running possession receiver. Every team needs one. He’s great at that. He’s averaged about 12 yds per reception and in 9 games last year avg 50 yards or less. But they’re paying him like he’s DaVante Adams, Justin Jefferson or Jamar Chase. He’s nothing like those guys. Again, not his fault, just the truth.

The Amari issue is more of a Dak and Kellen problem than an Amari problem
I’m not sure Coopers value would have been as high anywhere else.It can't have anything to do with what Dallas was willing to pay Cooper compared to what he receives from another team unless he would be willing to stay here for the same amount, which would mean being willing to take a pay cut. Players aren't often willing to take a pay cut because it seems like a slap in the face, even when they are willing to take less from another team.
If we want to compare them, then we need to look at production value. Does Cooper produce for his next team like a player we should have continued paying or do we get a similar production level from Gallup making less than that?
What's in the past is in the past. Pay rates change from year to year and there are multiple factors (age, production, etc.) that affect the going rate at the time. Cooper two years ago could have made more to leave Dallas than he took to stay. Dallas paid what his going rate was then. It isn't liable to be his going rate now. So that simply needs to stay out of the equation.

Answer to the question, how many draft picks have we wasted in WR trades under Jerry? The answer is embarrassing:Can we now officially say Jerry is no longer allowed to trade for a wide receiver again? Ever! At least this one got some better and longer value than Roy Williams or Joey Galloway, but how many draft picks have we wasted away the last 25 years looking for the next Michael Irvin?
Even if that is true, which I am not convinced of, his production in the Dallas offense doesn't justify paying him $56 million over the next 3 seasons.
