There are many kinds including the sweet that is more like cake than cornbread and the Mexican which has creamed style corn, cheese and jalapenos and most of them mix cornmeal with flour but I am doing the one today that is nothing but cornmeal.Man…there’s a lot of cornbread eatin fools on this site…….I need to investigate this phenomenon.

Do you like avocados? They have carbs but still good for a low carb diet (fiber). Anyway they are awesome grilled. Cut them in half, rub some olive oil on the fruit and cook them face down. Takes around 10 minutes to cook them on low heat. You want grill marks. I fill them with fresh pico de gallo and cotija.
