I’ve never done it either but a seafood variety is hard to find in SoCal right now. The only crab I can find is snow, the shrimp are a hit or miss on freshness, don’t like oysters so lobster it was.Been making gumbo for over 50 years. Never thought to put lobster in it.

To be honest, it doesn’t go well with gumbo, it is a texture thing and I probably won’t do it again……will just go with extra crab
