This is not about proof, but appearances. You are not awarding the game to New Orleans. No one is losing anything. In fact, I am guessing the Rams would agree. You are simply making use of a safety net to avert the possibility of impropriety.
You can't get caught up in worrying about "appearances" with every wrong or missed call in every game outside of doing whatever is possible to improve officiating. To do that would open a can of worms, and actually create a worse appearance with the league stepping in so often, plus it would be a bigger PR mess when relief is denied on some and given on others.
Think of these things ... first, how would you decide which games and bad calls reach the level of requiring action by the league, and second, if you are going to replay portions of games, picking up from the point of the bad call, how would you fit that in. It's not like baseball where you can make up portions of a game with a double header. There is only a week between games.
