In any case, as @shabazz said, you want to do the final cooking of the pasta in the pan with the sauce almost like a sautée. This is why in Italy the sauce is fully incorporated into the pasta instead of sitting on top of it.
I learned that tip originally from the Mom of Martin Scorsese. I think it came up cause she cooked a real pasta meal playing Tommy's Mom in the scene in "Goodfellas" where they had the mob guy in the trunk and stopped off at Mom's to eat telling her "the car hit a deer" when she noticed blood on his collar.

I think you just turned me on to making my own pasta now. I always use the boxed stuff. Is there a "best pasta maker" machine? Or, are you rolling it out and then cutting it? Does the common KitchenAid mixer have a rolling attachment? Probably.

I have 2 Imperia pasta rolling machines. I got one at a garage sale for 10 bucks that was never used, lol

I never used a machine to mix the pasta components together so I can’t speak to the kitchen aid but as long as it mixes super slow it should work with a dough hook

I usually build a circle with the semolina and bread flour on a granite or marble counter top. Than in the middle of the circle, I pour the eggs and olive oil. I than slowly use a fork to intergrate the liquid with the inner part of the flour slowly until it forms a sticky dough. Slow is the key, i than wrap it in Saran Wrap for 30 minutes before putting it through the pasta roller machine

Keep some bread flour out during the process to dust on the pasta dough so it doesn’t stick to the rollers.

Rusty, have you ever made pasta from scratch? Semolina, bread flour, eggs , olive oil and your in business. once you make it you’ll never go back to the dry boxed stuff.

you can find pasta makers at goodwill and used online super cheap because people don’t want to go through the trouble. If I make lasagna, I roll out sheets and can build and cook the lasagna without having to boil the pasta first…..it’s a show stopper
Gave my son a pasta maker for Christmas.... didn't realize how great it was ...getting ready to invest in a commercial grade sous vide for my birthday.

Well I’m a realist who has never left. I’m gonna root I want them to advance but I‘m cautiously optimistic about the chances. Dak had his best complete game in his career last week in a “big” game imo. Will he continue to ascend and put his team on his shoulders. I’m hoping for ascension but the inconsistent nature of this organization and players has me on the fence. With that going with some tenderloin and sushi today. Let’s do this and take the next step. I’m ready! Let’s go Cowboy!

Too early to know. But will probably be something simple.
Most likely some grilled chicken, with some type of rub, maybe BBQ or some herbs and spices.
Either a salad or some other side dish. Maybe some Mac and Cheese, or some other noodle dish.

Oh brother I was waiting for this. Already made a charcuterie board. Then I am going to make some fresh sougo. (Marinara for my American friends) . Followed by some double smoked chicken lemon pepper chicken wings. And Jack Daniel’s to wash it all down! I may end up in the clink if we win today just saying.
