I didn't say he was "great," nor did I say another QB, with that particular team, could or could not have got the Cowboys into the playoffs.

I merely stated a fact. You're certainly entitled to your opinion regarding QC, and I will not argue it. But don't bite my head off for presenting the truth.

1/3 c. peanut or vegetable oil
3-1/2 lbs. pork loin or butt, cut in 3/4-inch cubes
2 c. diced onion
2 T. minced garlic
4 c. chicken broth or water
2 t. ground coriander seed
2 t. dried Mexican oregano
2 t. chile caribe
3/4 c. Chimayo ground red chile, mild or medium
1 T. red chile honey
2 T. Sherry vinegar or red wine vinegar
salt to taste

Preheat the oven to 350°.

Heat the oil in a large skillet and brown pork in batches. Set the pork aside. Add the onion to skillet and sauté until golden. Add the garlic and sauté for 1 minute. Deglaze the skillet with 1 c. of the chicken broth, loosening the browned bits with a spoon.

Place the coriander, oregano, chile caribe, red chile, honey, vinegar and salt in the workbowl of a food processor. Add the cooked onions, garlic and broth from the skillet and 2 more c. of chicken broth. Process until the mixture is thoroughly combined.

Place the browned pork, the chile marinade and the remaining 1 c. chicken broth in an ovenproof pot or dish, stir to combine well, and cook for 1 hour or until the pork is tender.

Serves 8

Optional seasonings: ground canela, ground cumin seed, toasted ground chile seeds, toasted ground pumpkin seeds.

Note: This dish reheats wonderfully and is better the next day.

Note: The traditional method for making this dish is to mix the marinade ingredients together and pour this over the meat. Cover the mixture and refrigerate overnight. Pour the meat and the marinade into an ovenproof casserole or pot and bake, covered, for 2 to 2-1/2 hours, or until tender. The method described above, although not so traditional, brings out the flavors of the onion, garlic and pork because the ingredients are caramelized or browned first. Whichever method you choose, the dish is full of flavor and will be a favorite. You can serve the Carne Adovada over chile rellenos, rice, wrapped in a flour tortilla as a burrito, or with beans and posole.

IRVING – Quincy Carter, the last quarterback to lead the Cowboys to the playoffs, on Tuesday signed a one-year deal with an option to join Montreal of the Canadian Football League.

“This is the best way for me to get my career started and show how serious I am about playing the game I love. For me, I have to play football. It’s been my life and my passion,” Carter told The News. “I’m happy right now. I’m proud of picking myself up, and now it’s time for me to go on with my career and show the NFL that I’m a playoff-caliber quarterback and a starter in the NFL.

“For now, my career has taken me in other directions. At the end of the season, if anyone wants me, I’m free to go. If not, I’ll explore all of my options.”

Carter said he will spend the rest of the CFL’s off-season in Canada preparing for the upcoming season, which begins at the end of May.

Eugene Parker, Carter’s agent, said he’s glad Montreal general manager Jim Popp gave Carter an opportunity to prove he can be a productive quarterback.

“It’s a situation that Quincy definitely wanted to take advantage of because they have one of the top programs in the league,” Parker said. “Jim has done his homework. He knows about Quincy.”

Carter, a second-round pick by the Cowboys in 2001, had the best season of his career in 2003, passing for 3,302 yards with 17 touchdowns and 21 interceptions as Dallas advanced to the playoffs for the first time since 1999. It was coach Bill Parcells’ first season.

He was released unexpectedly during training camp prior to the 2004 season.
He later signed with the New York Jets and played in seven games. In his NFL career, Carter has completed 56.5 percent of his passes for 6,337 yards with 32 touchdowns and 37 interceptions.

“I made a mistake in the past. That mistake was for marijuana. I’m excited about getting a fresh start with Montreal and I want to put the things in the past behind me,” Carter said. “When you walk around and people think you’re on cocaine or bipolar, it hurts. None of that was the case.

“I had some issues, but I’ve worked on them and I’m happy about it.”

I for one was hoping Carter would go to Canada and resurrect his career. I think he could have been a decent NFL QB. And I think he can do well in the CFL, if he can control his personal demons.

The one he had that was well known at UGA when he was there.

If you think this was all over pot, think again.

Ok. Ask anyone who was at UGA at the time. It was an open secret he was a coke head. He and a few other members on the team were busted with it. He let his teammates take the fall and he got off. I have no proof that he was still a cokehead with the Cowboys beyond conjecture. But I'm willing to bet every penny I have on the fact that he was still a cokehead at the Cowboys and why there has been so much confusion about it. It's also why Quincy is copping to a weed problem. Says its weed and avoid the coke allegations.

Well, at least that puts an end to the talk that Q-ball's "mistakes" weren't his fault because the bi-polar demons made him do it...

No argument there...everyone has to be true to themselves, otherwise others will see us a liars...and failures.

I remember QC not owning up to some of his football play, and I think that is where the whole QC thing got all confused...QC was not accountable for his actions...

But, maybe he is trying now...at least he is on some kind of right path! :(

It could be a fib since NFL substance abuse policy prohibits results from being made public. IIRC many rumors out there had it as cocaine.
