I don't know what you do for a living, but my guess is it would be easier for your boss to replace you with someone equivalent than it would be for the Cowboys to replace Lawrence with someone equivalent. Not picking on you - that same thing would apply to me and my working situation too. NFL players have more leverage than everyday people, especially top ones, because you can't just hire a job recruiter to find candidates, hold interviews and find an equivalent replacement.
That said, I'm cool with it if the Cowboys decide not to meet Lawrence's demands. I would hate to lose him, but his contract has to fit within the overall team needs.

Yes, Dallas have other top tier players but they knew that last year. They could have locked in Lawrence for less but decided to tag him because they wanted him to prove it again. Not going to blame Lawrence for asking for the moon afterwards. He has that right, and Dallas has the right to either to continue to negotiate with Lawrence or trade him. It's business.
Well in fairness how many said not to pay Lawrence last year because one good year wasn't enough to pay out that kind of money? The "let him duplicate that and then we'll pay him" viewpoint. And there's validity to that. What if they forked over the money last year and his back got worse and now he's out of the league? People would then be screaming he was paid too early, just like some are screaming T. Crawford is "vastly overpaid" and was given a big contract too early in his Cowboys career.
Of course since the Cowboys didn't do that, now he's "worth" even more money.
But it's all 20-20 hindsight, no one knew what he would do in 2018, could have done as well as he did or fallen off, and in the latter case it would be "whew, we dodged a bullet, could have gotten stuck with a lot of dead cap money, good thing we did the franchise tag".

Teams play half their snaps in the nickel, if not more, and in those scenarios, there is absolutely zero difference between an OLB and a DE. In 2016 and 2017 (can't find 18), teams played the "base" defense ~30% of the time. Mack isn't dropping in coverage so often on those plays to make that an actual important part of what he's asked to do. He might as a changeup once in a while, but that's not part of his role.
