Great RBs can often react to the defense's pursuit and burn them by going away from where the run was designed to go.

The Giants had edge contain and good push in the middle all night. Zeke was a bit safe in his running but it's not like he missed all of these huge holes you seem to think they were there. He could never bounce left against Vernon, and if there's no middle, there's nowhere to go.
What you won't give him any credit for is plays like 1:26 where the Giants get penetration, the OL gets no push, and he has to bowl his own OL over for positive yards. That's a far better run than any of his runs were bad.
